Welcome to Gabon, where meals can be used as breakfast lunch or dinner.

Simple greens with peanuts can be had at any time of the day. With eggs for breakfast, bread (bâton de manioc or fufu) for lunch or with rice and a meat dish for dinner. If you’re really in the mood to be Popeye then you could make up a batch in the morning and have it throughout the day.


We used spinach as our greens, and eggs as our accompaniment and it was awesome. This is a super easy way to fancy up your breakfast. All you have to do is chop them fry. So go ahead, give it ago.

Greens With Peanuts Pla’sas recipe by the World Cookbook for Students

2TBS oil
1 onion
1 capsicum
1 tomato
500g spinach or other greens chopped fine
3 TBS peanut butter (natural preferably)
1/4c water
salt and cayenne to taste
1/2tsp nutmeg

Heat oil and sauté onions until translucent.
Add capsicum and sauté until soft.
Add tomato, spinach , peanut butter and water, and simmer lightly (add more water if needed)
Season, add nutmeg.
Cover and simmer for 5 minutes
Serve with rice, eggs or a meat dish
