Unusual fact: The island of Aruba is only slightly bigger than Washington DC
Last night we had our first taste of Aruba. It was a dessert and a very nice one at that. Don’t be put off by the boiling of the bananas they turn out almost like fried bananas. When you do place the bananas in the boiling water they might develop a brown coating, mine did but it went away. The ice cream we served it with was a special type of ice cream that we found in our favourite fruit shop called Get Fresh in Cotton Tree. This ice cream is made out of coconut milk rather than cream and we bough the mango and lime flavour, The brand of the ice cream is Co Yo. The bananas were sweet but not too sweet and the tangy ice cream off set the sweetness. We didn’t get to make the Aruban main because we had to pre order smoked pork shoulder so if you are planning on making the Aruban main next week maybe you should too. Stay tuned and happy eating!
4 ripe bananas
2 tbs cinnamon powde
r3 tbs vanilla extract
1 cup sugar
4 cups water
METHOD / DIRECTIONS:
Peal the bananas and boil them together with the cinnamon, vanilla extract, sugar and water for about 20 minutes.
Bake the bananas in the oven at 135°C for 10 minutes.
Serve with favorite ice cream.
